A preserved Italian aubergine caponata made with tender aubergines, vegetables and a rich sweet and savoury sauce.

Rustic, colourful and full of Mediterranean flavour, caponata is a classic Italian vegetable dish traditionally enjoyed as an antipasti, side dish or light meal. Preserved in a jar for convenience, it is ready to serve straight from the jar or gently warmed.
