Kataifi is a fine shredded dough from Greek, Turkish and Middle Eastern tradition, made by Preferita for wrapping both sweet and savoury fillings.

Baked or fried it becomes crunchy and delicate, a texture rather than a flavour.

Wrap around prawns or feta and bake, shape into nests for pistachio cream, or make the classic syrup-soaked pastries. Thaw before use and keep covered.
