Italian Herb Blend for Fish

Fish is easy to overwhelm. That is the problem this blend is designed around: aromatics chosen to sit alongside delicate flesh rather than march over the top of it.

Dried with care so the herbs keep their oils and their fragrance, the mix leans Mediterranean and restrained — herbal, gently citrus-lifted, savoury without heaviness.

Scatter over fish before roasting or grilling, work into a little olive oil as a marinade, or stir through a seafood pasta at the end. It is just as good on roast potatoes, which is nobody's business but yours.
