Greci slices small-to-medium courgettes, grills them and seasons them with sunflower oil, apple vinegar, parsley and herbs.
The slices stay firm, with clear char marks and a mild, savoury flavour.
Lay over a pizza after baking, add to a panino with salumi and provola, or serve on an antipasto plate with a squeeze of lemon.
