Description
Bottarga — the prized cured roe of grey mullet, a traditional Sardinian and Mediterranean delicacy. Intensely savoury with a deep, briny umami flavour, bottarga is shaved or grated over pasta, salads and seafood dishes. Often called the "poor man's caviar," it is a cornerstone ingredient of Italian coastal cuisine. Sold by the kilo.
