Fresh Nettles

Fresh nettle is a seasonal wild green with a deep earthy flavour, tender cooked texture and rustic Mediterranean character.

Once cooked, nettles lose their sting and become a beautifully savoury ingredient for soups, risotto, pasta, gnocchi, frittata, sauces and herbal infusions. Their flavour is often compared to spinach, with a more distinctive wild green note.

Serving suggestion:

Handle with gloves before cooking. Blanch briefly to remove the sting, then use in soups, risotto, pasta fillings, gnocchi, frittata, pesto-style sauces or sautéed greens.
